Here's a fun game where a position player caught:

Neifi Perez caught Jerry Dipoto! Jeff Reed pinch-hit for Kirt Manwaring, then Reed got hurt. Neifi Perez came in to catch, Larry Walker played 2B, Mike Lansing went from 2B to 3B, and Vinny Castilla went over to SS. Unfortunately it only lasted for 6 pitches. The first 4 were an intentional walk to Tim Salmon to load the bases in a tie game, then Perez gave up a passed ball on the second pitch to Cecil Fielder, scoring Jim Edmonds.

With only my memory, it seemed that LaRussa would give up if the game went more than 12-13 innings. He would just throw whichever scrub/Oquendo that he wasn't planning on playing the next day on to the mound just to get the game over with.
